We then paired that analysis with original nationwide consumer research* to understand something we think is even more important: what actually helps a new flavor move from trendy buzz to permanent pantry staple.

Our Top 10 Flavors to Watch in 2027

This year’s list reflects a mix of emerging global flavors, familiar ingredients finding new relevance and flavors with the versatility to move across categories and eating occasions. 

The 2027 trending flavors list includes:

Black garlic rose to the top of our top 2027 flavor predictions list because it brings together several things we believe matter for an emerging flavor: it feels new without being completely unfamiliar, it works across a wide range of foods and our research shows real consumer interest: Half of consumers surveyed said they are interested in trying black garlic in 2027. 

But the Top 10 list is only one part of the story. 

Earning Attention Is Not the Same as Becoming a Pantry Staple

Like last year’s inaugural report, this year’s edition looks beyond foodie fads and consumer curiosity to understand how flavors move from awareness to trial to repeat purchase and, ultimately, to pantry staple. 

Our research looks at the full journey a flavor has to make, from The Spark to The Pantry Test to The Repeat Buy and ultimately Staple Status. At each stage, we examined what influences consumers and what marketers can do to keep a promising flavor moving forward. 

The findings show just how difficult that journey can be. 92% of consumers say they are likely to buy a new flavor again after a positive experience. Yet only 11% of household grocery decision makers say newer flavors have become everyday staples in their homes.

Consumers are also becoming more selective about trying new flavors, stating that price is the leading barrier to experimentation and that grocery stores are playing an increasingly important role in discovery. Social media still matters, especially in helping consumers encounter new foods and flavors, but our findings reinforce that discovery happens across a broader mix of influences, including retail, friends and family, food media and restaurants. 

That creates an important challenge for food and beverage marketers. It is not enough to identify the next big flavor or generate social buzz around it. You also have to understand how to help consumers discover it, try it, buy it again and eventually make room for it in their everyday routine.
